Fattoria Carpineta Fontalpino Do Ut Des is a dry, full-bodied Tuscan blend of organically grown Cabernet Sauvignon, Merlot and Petit Verdot that pours a deep, brooding ruby and greets the nose with concentrated layers of macerated black cherry, roasted plum and crushed violet, accented by warm notes of espresso, dark chocolate and a whisper of graphite. On the palate it is beautifully structured with dense, polished tannins and a core of dark fruit intensity framed by bright acidity, carrying through to a mineral-driven finish of impressive length. Serve it at room temperature and drink now through 2035, with the wine only gaining complexity with further cellaring. Winemaker Gioia Cresti, one of Tuscany's most celebrated female enologists who was honored as Best Woman Winemaker in Japan, named this flagship wine after the Latin principle "I give so that you will give," a philosophy she applies equally in the vineyard and the cellar. The estate received organic certification in 2008, and every aspect of production from harvest through aging in tonneaux reflects Gioia's hands-on, minimal-intervention approach. Try this wine alongside a slow-braised lamb shank with rosemary and white beans, where its earthy depth becomes pure poetry, or pair it with a platter of aged Pecorino and prosciutto for an effortlessly elegant Italian spread.
