Famille Perrin 2021 Tavel is bold pink in the glass, fragrant and brilliant with food-friendly acidity to match fresh strawberry, red berry, fine herb and spicy flavours on the palate. A dry, medium-bodied blend of Cinsault, Grenache and Mourvèdre, this rosé is produced in the saignée method, where the whole berries are placed in the tank and are allowed to crush under their own weight. After 12 hours of maceration, the free run juice is left to 'bleed' out and fermentation begins after settling. The wine juice was cool-fermented up to 20 days, racked and rested in stainless-steel tanks until filtered and bottled in February after vintage.
