The Elderton Estate Cabernet Sauvignon from the Barossa, South Australia is a 100% Cabernet Sauvignon sourced from three estate vineyards at varying elevations and aspects across the Barossa floor, aged 24 months in seasoned French oak hogsheads and puncheons, opening with a captivating nose of ripe dark plum, crushed blackcurrant and a curl of dried thyme, while the full-bodied palate delivers concentrated layers of roasted fig, warm dark spice and a savory streak of dried tobacco, all framed by chalky, finely textured tannins and a long, robust, satisfying finish. It is bone dry and generously structured, so serve it slightly below room temperature and enjoy now through 2034. Winemaker Julie Ashmead, who carries forward a proud second-generation family legacy alongside her brothers-in-law Cameron and Allister, crafts this wine from estate vines first planted by German settler families in 1894 on the banks of the North Para River in Nuriootpa, a treasure of a vineyard that Neil and Lorraine Ashmead rescued from total dereliction in 1980 after a real estate agent offered them the surrounding 72 acres of ancient old vines for free if they simply bought the farmhouse. Elderton shot to national prominence by winning Australia's most coveted wine award, the Jimmy Watson Trophy, in 1993, followed by claiming the World's Best Shiraz Trophy at the London International Wine and Spirit Competition in 2000, making the estate one of the most decorated family producers in all of the Barossa. Pour it alongside a venison filet mignon with a rich red wine and juniper gravy, where the wine's dark fruit and earthy depth are a seamless match for the gamey richness of the meat, or serve it with grilled bison strip steaks rubbed in cracked pepper and smoked salt, letting the wine's bold structure and warming finish rise magnificently to meet every satisfying bite.
