Dunrobin Distilleries Seven Seals Sherry Wood Finish Single Malt is a smooth and generous whisky layered with dried figs, roasted almonds, and dark chocolate. Hints of orange zest and warm spice carry through on the long, silky finish. It's dry and full-bodied, best enjoyed at room temperature to let its richness unfurl. Tuck it away in your cellar for another 8-10 years, as the sherry cask influence will deepen beautifully with time. Fascinating fact: Master Blender Christian Lauper, who heads the whisky program, is known for pioneering accelerated aging techniques that use time, pressure, and temperature to develop complex flavour in a shorter span than traditional cask maturation. This whisky has also been recognized internationally for its innovation in finishing methods. Pair it with slow-roasted lamb rubbed with rosemary, as the whisky’s savoury depth harmonizes with the meat’s richness. Or try it alongside a square of flourless dark chocolate cake, where the sherry notes in the spirit play up the dessert’s bittersweet intensity. And because whisky can sometimes feel like a brooding philosopher in a glass, this one adds a wink—more lively raconteur than armchair pessimist.
