Sir Passo from Duca di Saragnano is a Tuscany IGT red that bridges tradition and innovation through a fascinating winemaking technique in which a portion of the grapes are left on the vine for an additional four weeks after harvest, then the freshly crushed juice, skins, pips and stems of those late-picked grapes are added back to the wine after fermentation, deepening its concentration and adding a bold, layered character that sets it apart from a typical Tuscan table wine. Deep ruby in the glass, it offers an inviting nose of blackcurrant, dark cherry and stewed fig, with undercurrents of dried rosemary, leather and a lively streak of warm spice running through to a long, satisfying finish. It is dry and medium to full-bodied with firm but approachable tannins, best served just below room temperature, and is best enjoyed in its lively youth through 2027. While the current winemaker at Duca di Saragnano guides this wine with a sure hand, it is the innovative appassimento-inspired technique itself that is the real star, echoing the great dried-grape traditions of northern Italy while giving them a distinctly Tuscan accent. Serve it with a bubbling veal Parmigiana straight from the oven, where the wine's dark fruit and spice will hold their own against the rich tomato sauce and melted cheese, or pour it alongside a grilled pork tenderloin rubbed with garlic and fennel seed, letting the wine's herbal notes and firm structure complement every juicy bite.
