Domäne Wachau Terrassen Federspiel Grüner Veltliner from the Wachau DAC in Austria is a dry, medium-bodied white of genuine alpine elegance, crafted from terraced vineyards carved into the Wachau's dramatic, rugged slopes and fermented in stainless steel with a hint of skin contact to add a subtle layer of texture and complexity to its naturally vivid, aromatic character. Pale gold with a luminous green tinge in the glass, it opens with a refined nose of fresh tarragon, dried chamomile and a delicate suggestion of white pepper, flowing into flavours of quince, preserved lime and a cool, saline whisper of crushed shell on the palate, all carried by a lively, precise acidity and a clean, mineral-driven finish that lingers with quiet, satisfying persistence. It is bone dry and best served well chilled, drinking beautifully now and rewarding cellaring through 2029. The Federspiel classification, named after the lure used by falconers in the Wachau region, denotes a lighter, more delicate style of Grüner Veltliner designed for earlier drinking and food-friendly versatility, and Domäne Wachau, as the region's largest and most celebrated cooperative producer, has long set the benchmark for what this classification can achieve at its finest. Serve it alongside pan-fried panfish with a squeeze of fresh lemon and capers, where the wine's saline minerality and precise acidity will complement the delicate, flaky fish beautifully, or pair it with a vegetarian pizza topped with roasted zucchini and fresh ricotta, letting its herbal freshness and quince depth weave delightfully into every bite.

Grüner Veltliner food pairings: green salads, pan-fried panfish, vegetarian pizza, ceviche, cheese fondue, veal cutlets.
