NEW: Fume Blanc is the Loire's name for Sauvignon Blanc. Domaine Fournier's lovely Eve bottling comes from Pouilly-Fume, where flinty silex soils are responsible for the grape's smoky character. That shows up as a distinctly mineral, gunflint note alongside grapefruit and green apple, with acidity crisp enough to keep everything taut. Fresh-cut hay appears on the finish. Goat cheese or grilled fish would both suit it.

Fumé Blanc food pairings: grilled or roasted sea fish, Thai-style dishes, seafood.
