From Domaine Daniel-Etienne, Defaix Les Lys 2006 Premier Cru Chablis is bone-dry, rich and racy on the palate with ripe pear, orange zest, oyster shell, and briny mineral flavours. After vinification and malolactic fermentation, the wine was aged in tank on its fine lees for four years with a monthly bâtonnage. The lees stirring breaks up the lees which releases a pleasantly waxy glycerine that works as an antioxidant as well. Les Lys' is at the top of Vaillons and was once owned by the French Crown. The vineyards are on Kimmeridgian marl soils and are north-facing, so the grapes enjoy a long and even ripening process. The Domaine's origins date back to 1610 and is now run by Daniel-Etienne Defaix, 14th generation of the Defaix family.
