Domaine Daniel-Étienne Defaix (2003) is a Chablis from Côtes De Lechet in the Burgundy wine region. One of the oldest properties in Chablis and with family winemaking ancestry stretching back some 400 years, this is a domaine with important historical presence. The 26-hectare estate has significant Premier Cru plantings. No oak is used in the élevage, and wines are bottled unfined and unfiltered. The grapes for this Chablis were grown in the stony soils of the steeps slops of the Côte de Lechet vineyard. The wine received 18 months lees stirring. - Community Wine Reviews
