One of Burgundy's oldest and most historically significant négociant houses, Bouchard Père & Fils traces its roots to 1731 and owns more Premier and Grand Cru vineyard land in the Côte d'Or than almost anyone else. This extra-dry Premier Cru Pinot Noir opens with tart pomegranate, dried rose petal, iron-tinged earth, and warm clove, then flows into a silky, focused palate of dark cherry, graphite, dried thyme, and a long layered finish with firm tannins. Cellar it through 2040, decanting first, and serve with planked salmon or roast veal.

Food pairings: planked salmon, roast veal, mushroom risotto.
