Dalton Canaan Red from Upper Galilee, Israel is a medium-bodied blend of Shiraz, Cabernet Sauvignon, Merlot, and Petit Sirah from estate vineyards nestled in the hills adjacent to the ancient village of Kerem Ben Zimra, and it's kosher. On the nose it's fresh and approachable, with warm baking spice, and wild herbs from the sun-baked Galilean hillsides. The palate is rounded and juicy, with dark plum, cracked pepper, a whisper of toasted cedar, and a clean, easy finish with soft, food-friendly tannins. Winemaker Guy Eshel crafts this wine for Dalton Winery, founded in 1995 by father and son Mat and Alex Haruni, who identified the Upper Galilee's potential as a premium wine region and built what is now one of Israel's most celebrated kosher producers from 80 hectares of estate vineyards. Pour it with pasta with a tomato and herb sauce, where the wine's warm spice and dark fruit are a natural Mediterranean match, or try it with chicken skewers and lemon garlic where its easy-going character makes it the kind of wine everyone reaches for.

Food pairings: pasta with tomato and herb sauce, pizza margherita with fresh basil, chicken skewers with lemon and garlic.

Incomparable Kosher Wine
