Croix Canon, Château Canon’s second wine, is a delicious and complex medium-bodied blend which combines a majority of Merlot with a smaller quantity of Cabernet Franc. With well-balanced tannins, mineral, earth and fruit notes and a smooth texture it was our clear favourite of two pairings with ‘joues de boeuf confit’ (candied beef cheeks?) at a recent supper with wine loving friends. Previously called Clos Canon, it was renamed in 2011 after the stone cross that marks the entrance to the 12th century chapel on the Château grounds not far from the Camino de Santiago pilgrimage route. Would age well for 3-5 years but is beautifully drinkable now - would definitely recommend carafing it to bring out it’s complexity.
From the Saint-Émilion, Bordeaux wine region, Croix Canon 2012 is a new second wine from Château Canon. Croix Canon is a medium-bodied red blend of 75% Merlot and 25% Cabernet Franc with ripe red, blackberry and blueberry flavours silky and elegant on the palate finishing with a clean minerality and zesty acidity for food.
