An ethereal, complex Niagara Pinot Noir with a tight-rope balance between nervy acidity and quivering fleshy cherry notes. Layers of sensual pleasure, yet not heavy. A great wine from a great vintage and a great producer. Pair with quail and sensuality.

Pinot Noir food pairings: lamb, roast duck, lighter cuts of beef, creamy cheeses such as Brie or Camembert.

Each of our Pinot Noir lots was hand-harvested to ensure only the best fruit made into the batch, fermented in small lots, punched down by hand several times daily over 14 days, and aged 15 months in exclusively French oak barrels, with 20% new oak. From these barrels, the winemaker selected the 5 best for this wine. The wine was minimally fined and filtered prior to bottling in March 2015.
