Col d'Orcia's Olmaia Cabernet Sauvignon from Tuscany is a powerful, full-bodied red wine offering notes of damson plum, wild blackberry, charred tobacco and iron. This dry, organically grown wine displays silky tannins and concentrated richness that will continue to develop over the next seven years. Serve it at room temperature with well-marbled ribeye steak from the grill as the wine's muscular structure stands up to the charred beef, or pair it with game stew where the wine's hedonistic depth complements the savory meat. Winemaker Francesco Marone Cinzano crafts this polished Cabernet with no vegetal character, behaving almost like Sangiovese in its expression of dark fruit alongside stony mineral complexity and hints of menthol. Col d'Orcia has been producing exceptional organic wines in Montalcino since 1890, and this Sant'Antimo bottling showcases their expertise with international varieties on Tuscan soil. This mouth-filling, savory wine represents outstanding quality and will drink beautifully through 2033.

Cabernet Sauvignon food pairings: well-marbled steaks from the grill, roast beef, roast duck, game stews.
