Cluster Flock Rueda Verdejo Sauvignon Blanc Chardonnay is a lively, light to medium-bodied organic white blend that wears its irreverent name with pride, offering an exuberantly aromatic nose of ripe mango, honeydew melon, juicy pineapple, fresh gooseberry, and a bright, herbaceous lift that keeps everything vivid and dancing. It is dry and refreshingly clean on the palate, with a silky, rounded texture from light lees contact and a zingy, mouth-cleansing acidity that carries the fruit all the way through to a crisp, lingering finish. The Citizen Wine team harvests the grapes in the cool of the Rueda night to lock in aromatics before swift chilling and pressing, a thoughtful winemaking approach that preserves the freshness and varietal character of all three varieties. The wine's name tells a genuinely entertaining story: a wandering herd of sheep broke loose and grazed their way through the best vineyard block, eating half the grapes before anyone could stop them, and what could have been a harvest catastrophe turned into an unexpected triumph as the reduced yield produced a more concentrated, flavourful wine than planned. Serve it well chilled alongside fish tacos with a mango and coriander salsa, where its tropical exuberance and bright acidity are a perfect match, or with a bowl of chilled gazpacho and crusty bread on a warm evening for a relaxed, sun-drenched pairing. Drink it now while its freshness is at its sparkling best.

Verdejo Sauvignon Blanc Chardonnay food pairings: fish tacos with mango and coriander salsa, chilled gazpacho with crusty bread, grilled calamari with lemon aioli.
