Vignobles Diffonty's Chateau Sixtine Cuvée Du Vatican Châteauneuf-du-Pape from Rhône is a powerful, full-bodied red wine blending Grenache, Syrah and Mourvèdre with notes of wild blackberry, garrigue, tobacco and cracked pepper. This dry, concentrated wine displays plush tannins and impressive depth that will continue to evolve over the next five years. Serve it at room temperature with braised beef bourguignon as the wine's intensity matches the rich wine-based sauce, or pair it with roasted leg of lamb with herbes de Provence where the wine's Mediterranean character complements the aromatic herbs. Winemaker Pierre Diffonty crafts this exceptional cuvée from parcels across multiple terroirs within the appellation, aging the wine in a combination of concrete, stainless steel and neutral oak to preserve the fruit's purity. The estate takes its name from Pope Sixtus IV, honoring Châteauneuf-du-Pape's historic connection to the papal palace built in the 14th century when the papacy relocated to Avignon. This commanding Châteauneuf-du-Pape will cellar beautifully through 2030 and beyond.

Food pairings: Stew, rare steak, stuffed flank steak.
