High alcohol but the wine doesn't taste hot: rich and full-bodied with complex layers of black fruit, hickory smoke and dried herbs. So savoury! Love the incredible range of styles that the Rhone region produces, like this intriguing red wine blend. Full-bodied and deeply savoury. Violets, black plum, deep dive black raspberry into a heart of welling darkness and satisfaction. Concentrated and deep with a long, sensuous finish that leaves you bathed in flavour satisfaction. Pair with grilled meats.
Food pairings: smoky game burgers, beef steak, rack of lamb.

Tasted Nov. 9, 2017. Colour dense bright ruby red, nice colour. Legs thick on the glass suggests high alcohol. Aromas and flavours of, grilled plum meets plum sauce, blueberry, licorice, milk chocolate. Taste, dry plus, medium mouthfeel, soft expressive tannin, medium acidity. The alcohol is nicely integrated with the tannin taste. Finishes long with a dry chalky chocolate taste. I like this wine because it evolves during the tasting and the aromas and flavours change over time while drinking. Makes me want to drink this again. Good value nice wine, paired with prime rib to night.

|Produced by Domaine Lafage, this robust Rhone red wine from 2015 vintage of this Cotes du Roussillon Chimeres is a blend of mostly Grenache and Syrah grapes, with a splash of Carignan. The wine undergoes an extended cold-soak that's not in stainless steel tanks, then fermentation in 500 litre barrels. The vineyards are located close to the village of Maury in the Rhone Valley. The 2015 vintage of the Côtes du Roussillon Villages Chimeres is made up of 60% Grenache, with 30% Syrah and 10% Mourvèdre. The grapes for this wine grow on 100-plus year old vines in schist soils. While the wine is aged in oak, these are 500 The wine is aged 12 months in both 500-litre oak barrels and mainly employed to mellow out the wine and marry its flavours. Chimeres is a full-bodied wine with violets, crushed raspberries and black plum on the nose and delivers same on the palate with a savoury olive finish and bright acidity.
