The Château Le Cap from Blaye Côtes de Bordeaux A.O.C. is a sustainably grown Merlot-based red from the scenic limestone-rich right bank of the Gironde estuary, opening with an inviting nose of dark wild cherry, crushed blackberry and a whisper of warming cinnamon, while the medium-to-full-bodied palate delivers concentrated flavors of ripe dark plum, dried blueberry and a savory thread of cracked black pepper, all framed by substantial, well-structured tannins and a focused, lingering finish. It is bone dry and built for the table, so serve it slightly below room temperature, decanting for an hour before pouring, and enjoy now through 2027. Blaye Côtes de Bordeaux is one of the oldest wine-producing appellations in all of France, with viticulture on these dramatic cliffs above the Gironde stretching back to Roman times, and the region earned full A.O.C. status as recently as 2011 after a successful campaign to distinguish its wines from the broader Bordeaux appellation, a milestone that has brought well-deserved international attention to estates like this one. Pour it alongside a classic tourtière spiced with clove and allspice, where the wine's dark fruit and warming spice mirror the rich, savory depth of the pastry, or serve it with a grilled ribeye steak and a red wine reduction, letting the wine's firm structure and concentrated fruit rise beautifully to meet the richness of the meat.
