This French Cabernet blend is savoury, cedary French red wine with mouth-watering acidity and offers tart black currant aromas and flavours. Decant 2 hours. Finishes with cassis, cedar and blackcurrant. Pair with lamb and rosemary tonight.

I had to dig a little for the fruit but coming through was cassis, blackberry, plum. Initially aromas of eucalyptus, mint and leather, herbs de provence. On the palate the dark fruit came through with secondary flavours of oak, underbrush, and meat. The tannins were drying and acidity medium+ and cleansing. A decent finish of dark fruit and herbs. Decant at least 2 hours. Pair with salted grilled red meats.

Produced by De Haux Néel - Chombart, Proprietor-Viticulturist, the grapes for this Bordeaux red wine blend include 60% Merlot, 30% Cabernet Sauvignon and 10% Cabernet Franc. The winery uses limestone caves to age the wines of Château Lamothe de Haux. These caves were first excavated in the 17th century to provide the stones needed to build the winery château. The cellars are located 30 metres below ground level and offer naturally perfect conditions for age in terms of temperature, humidity and lack of light.
