Château La Cardonne Médoc Cru Bourgeois Supérieur A.O.C. is a dry, medium-bodied Cabernet Sauvignon and Merlot-dominant Bordeaux blend opening with a focused and refined nose of graphite, dried cassis, crushed slate, bay laurel, and a lifted marine freshness that speaks of La Cardonne's unique position on the Médoc's highest plateau near the Gironde estuary. On the palate it is silky and vibrant, with fine-grained tannins, well-pitched acidity, and a long, harmonious finish of dark fruit, liquorice, and pencil shavings that rewards patience with every sip. Decant for an hour and enjoy from 2026 through 2038, as this wine has the architecture and elegance to develop beautifully. Winemaker Magali Guyon, who joined La Cardonne in 2000 after her tenure at the celebrated Château Lynch-Bages, crafts this wine with an unwavering pursuit of finesse, aging the wine in French oak barrels before it descends into the estate's spectacular underground cellar known locally as "the Cathedral," built ten metres beneath the vines to provide natural, constant temperature control. The château has produced wine for over three centuries, and a particularly distinguished chapter of its history came when Domaines Barons de Rothschild, the owners of Château Lafite, acquired and developed the estate - a legacy that still echoes in the precision and ambition of every bottle produced here. Pair it with a prime rib rested in its own jus and a scattering of fleur de sel, where the wine's graphite and dark fruit will embrace the richness of the beef with classic Médoc elegance, or serve it alongside a slow-braised game terrine with mustard and cornichons, letting the wine's structure and earthy depth find their natural home.
