From the Castillon Côtes De Bordeaux wine region, Château Hyot 2019 is produced by Alain Aubert, prop. A blend of 60% Merlot, 30% Cabernet Sauvignon and 10% Cabernet Franc, this savoury blend is full on the palate with dark plum, cassis, crushed raspberry, white pepper spice and flinty mineral flavours. Tannins are structured and fine and there is great food-friendly acidity for a roast beef dinner. Good now, better in 2023.

Food pairings: rare rib steak, stuffed pork tenderloin roast, gourmet burgers.
