Château Ferran Pessac-Léognan is a dry, medium-bodied blend of 70% Merlot, 25% Cabernet Sauvignon and 5% Petit Verdot from the gravel and limestone-clay soils of Bordeaux's Left Bank that pours a deep, brilliant garnet and opens with a classic, composed nose of sun-dried black cherry, pressed violet and toasted hazelnut, layered with notes of warm allspice, damp forest floor and a gentle cedar thread from its time in 35% new oak barrels. The palate is focused and precise, with firm yet polished tannins, a juicy mid-palate and a fine mineral streak running through to a long, elegant finish. Serve it at room temperature and drink from 2027 through 2034, as this wine is built to reward patience. The fifth generation of the Lacoste family, siblings Thibault and Olivia, now steward this estate that has belonged to the same family since 1880, carrying forward a legacy made all the more remarkable by the knowledge that the great French Enlightenment philosopher Montesquieu himself planted these very vineyards in the 18th century, long before his "Spirit of the Laws" made him one of the most influential thinkers in history. Today Château Ferran holds HVE3 sustainable certification, with no herbicides or synthetic pesticides used across its 70-hectare estate of vines, ancient forests and cattle meadows. Pair this alongside a grilled entrecôte with a mushroom and shallot sauce, where the wine's earthy depth is a natural partner, or serve it with a slow-braised beef shoulder pot roast for a deeply classic Bordeaux pairing.

Food pairings: Grilled steak with mushrooms, beef shoulder pot roast.
