The 2011 vintage has a more judicious use of oak and better balance than previous vintages. Aromas of black fruit, smoke and toast on the nose from oak barrel aging. Leads with Cabernet Sauvignon in the blend with Merlot. An attractive French red wine blend with classic aromas of tart black cherry, cigar box, smoke and tar. Full-bodied with a peppery finish. Pair with prime rib.

Food pairings: roast pheasant stuffed with apple and apricot dressing, roast wild duck and wild rice, oriental pheasant salad.

This is a beautifully aromatic red wine right off the top. Medium ruby with a garnet hue. Woody, violets, cherry, smoke, blackcurrant leaf, leather carry the load on the nose. Medium(+)bodied with mild tannins and medium(+) acidity and flavours of chocolate, strawberry, tobacco and baking spices. Length is long on an elegant fruit driven finish. Loved it! Pair with your favourite cut of red meat. My choice would be AAA Alberta Beef.
