Cave Spring's Estate Chardonnay from Beamsville Bench, Niagara Escarpment is a refined, medium-bodied white wine offering notes of Bosc pear, golden apple, lemon custard and toasted vanilla. This dry wine displays harmonious balance and maritime salinity that will continue to develop into the mid-2030s and beyond. Serve it chilled with roast chicken as the wine's elegant character complements the herb-seasoned poultry, or pair it with lobster in butter where the wine's pristine purity balances the rich shellfish. Winemaker Angelo Pavan crafts this must-try paragon from 36-year-old vines, sourcing fruit from high-elevation vineyards in dolostone, clay, limestone and gneiss soils with cooling breezes from Lake Ontario enhancing freshness and layered complexity. Named for the limestone caves and mineral springs in their estate vineyard, Cave Spring has long been a go-to source for exceptional precision and grace in premium Niagara winemaking. This expressive, consistently outstanding Chardonnay with hints of marmalade and warming spice represents excellent quality and will drink beautifully through 2032.
