Hazelnut and white peach on the nose opens up to lovely ripe pear on the palate. Full-bodied and supple, but not heavy. Long finish.

Complex, elegant, and generous nose of creme brulee, toasted caramel, apricot, citrus zest, butterscotch, and barrel spice. Dry and fresh, structured yet approachable. The crisp palate boasts lemon, apple, pear, peach, and apricot at first, followed with a creamy and textured mouthfeel. The long finish resonates with baked apple and cinnamon. The fruit for this wine, constituting only the top 5% of the yield, came from the nearly 40 year old vines of the Cave Spring Vineyard. The fermentation was done exclusively in French oak between barriques and puncheons with a portion fermented by indigenous yeasts. The CSV offerings from Cave Spring Cellars never disappoint, and this Chardonnay is one of the finer bottles in the region. Enjoy with roasted game birds and mushrooms, pork tenderloin with grainy mustard, roast chicken, or grilled veal.
Cave Spring CSV 2015 is a full-bodied, dry Chardonnay from the Beamsville Bench, Niagara Escarpment in Ontario. Look for ripe pear, hazelnut honey and citrus flavours on this drink now Chardonnay. Pair with a sunny day. - Community Wine Reviews
