Vintages Wine Panel: The 2006 vintage in Ontario was cool. At first, '06 wines made with Bordeaux grapes were a touch muted. Now, a year or two on, the wines are starting to make a big impression. Cave Spring's Merlot is a prime example. Well-handled toasty oak surrounds an array of aromas, including black cherry, plum, vanilla and coffee bean, as well as a hint of minerality. On the palate, it's dry with good fruit replays, and moderate tannins bring fine balance. Medium-bodied with a lingering finish. Try it tonight. My note: a juicy, generous, plumy wine loaded with berry-ripe flavors and dark chocolate notes. Smooth and supple with full-bodied warmth. This is a wine that gives you coming back for more … and more.
