Castello Romitorio Filo Di Seta 2015 Brunello di Montalcino is produced from 100% Sangiovese wine grapes. Filo di Seta, translates to "Silk Thread" and is the name of a creek that flows through the nearby forest. The Sangiovese vines are located at an altitude of 350 metres and are northwest facing. Fermentation starts in stainless-steel tanks with a short cold maceration (below 20°C) up to 20 hours on grape skins, followed by up to 20 days of maceration at a warmer, controlled temperatures. The wine matures in oak barrels for up to 30 months, bottled and then aged in temperature-controlled cellars for one year prior to its release. The wine is fragrant with pink florals, dried cherry and nutty, woody aromas. Dry, medium-plus-bodied with vibrant, bright cherry, pink florals, savoury herb and structured tannins. It will continue to evolve over the next 15 years.

Brunello food pairings: veal medallions in wild mushroom and red wine sauce, grilled ribeye steaks, rich meat-filled pastas and sun-dried tomato sauce.
