The Cabriz Colheita Selecionada from Dão D.O.C. is a sustainably farmed red blend of Touriga Nacional, Aragonez and Alfrocheiro, each vinified separately and aged six months in French oak barrels, opening with an inviting nose of dark bramble fruit, dried thyme and a curl of toasted cedar, while the full-bodied palate delivers concentrated flavors of ripe black cherry, crushed plum and a warming thread of ground clove, all framed by firm, chewy tannins and a spiced, lingering finish. It is bone dry and robustly structured, so serve it slightly below room temperature, decanting for an hour before pouring, and enjoy now through 2034. Winemaker Osvaldo Amado crafts this wine from estate vineyards nestled among fragrant pine forests in the granite-rich soils of central Portugal, where cool mountain nights and warm days produce grapes of remarkable natural concentration and freshness. Cabriz holds the remarkable distinction of being the best-selling Dão wine in the world, and the estate parent company Dão Sul was born in 1989 from the historic Quinta de Cabriz property, which features a magnificent manor house and a chapel dating back to the 17th century, with the brand earning consistent recognition on Wine Spectator and Wine and Spirits Top 100 lists across multiple vintages. Pour it alongside blackened chicken thighs with a smoky paprika and garlic rub, where the wine's dark fruit and earthy spice mirror the bold flavors of the dish, or serve it with a barbecued beef brisket slow-cooked over wood chips, where the wine's firm structure and concentrated fruit are a natural, hearty match.
