Burrowing Owl 2019 Cabernet Sauvignon is a youthful Cabernet Sauvignon built for aging. Grapes were sourced from Eva’s Vineyard in Osoyoos and the Burrowing Owl Vineyard in Oliver. Grapes were harvested and sorted by hand, destemmed and gently crushed prior to being gravity fed into stainless tanks for maceration and fermentation. The wine was aged in a variety of oak barrels (82.5% French, 15% Hungarian and 2.5% American - 34% new; 30% one- two-year-old barrels and 36% neutral oak) that contributed savoury, toasty and spicy notes to the wine as well as rounding out tannins. Fragrant with cassis, red currant, black cherry and minty aromas; dry, full-bodied and vibrant with dark cherry, blackberry, blueberry, anise, lavender, violet, savoury herbs and well-integrated oak spice and dark spice flavours with a long, brilliant finish on the palate. Tannins are fine-grained and velvety. A beautiful Okanagan, B.C. Cab. Pour with filet mignon. Drink or hold.
