Bruno Paillard's Dosage Zéro D:Z Champagne is a refined, medium to full-bodied sparkling wine offering notes of yellow plum, chamomile, citrus peel and toasted almond. This sparkling wine is made using Méthode Traditionnelle or the traditional method of the second fermentation in the bottle, just as they do in the Champagne region. This bone-dry, zero-dosage style displays lively mousse and impressive structure that will continue to develop over the next nine years. Serve it well chilled with freshly shucked oysters as the wine's mineral character complements the briny shellfish, or pair it with yellowtail sashimi where the wine's crisp purity enhances the delicate fish. Winemaker Alice Paillard represents the third generation of her family crafting Champagne, following her father Bruno who founded the house in 1981 as one of the few remaining family-owned, independent Champagne producers. Bruno Paillard was a visionary who introduced disgorgement dates on bottles decades before it became industry practice, demonstrating his commitment to transparency and quality. This sophisticated zero-dosage Champagne represents exceptional quality and will drink beautifully through 2034.
