Brigaldara Valpolicella Ripasso Superiore is a dry, medium-to-full-bodied blend of 55% Corvina, 25% Corvinone and 20% Rondinella from the heart of the Veneto that pours a vibrant ruby and opens with a seductive, layered nose of sun-dried fig, crushed morello cherry and dried orange blossom, lifted by warm notes of toasted fennel seed, cardamom and a thread of sea salt minerality that speaks to the region's ancient soils. The palate is silky and generous, with polished tannins and a bright, cooling acidity that gives the wine wonderful energy and freshness, finishing long with a pleasantly chewy grip and a lingering whisper of bitter cocoa. Serve it at room temperature and enjoy from now through 2032. The Ripasso technique used here is genuinely fascinating: after Amarone is drawn off its grape skins, the still-sugar-rich Amarone marcs are blended with the Valpolicella wine to trigger a second fermentation, enriching the structure and complexity in a process whose Italian name literally means "to pass over again." Owner and winemaker Stefano Cesari, whose family has owned the estate since 1928, also served as President of the Valpolicella Region Grower's Association and has been instrumental in elevating the quality of this appellation, earning Brigaldara its prestigious Gambero Rosso Tre Bicchieri award as far back as 1997. Try this alongside a slow-cooked beef and mushroom lasagne, where the wine's dark cherry richness and herbal lift complement every deeply savoury layer, or pair it with aged Asiago and a charcuterie board for an effortlessly Italian evening.
