Bouvet Saphir Brut Vintage from Saumur opens with aromas of crisp green apple, ripe pear, and warm baking spices with hints of toasted brioche and almond. Off-dry and medium-bodied with vibrant acidity and fine, persistent bubbles, it flows across the palate with succulent stone fruit and closes with a focused, lengthy finish. Serve it well chilled or cellar it through 2030. This sparkling wine is made using Méthode Traditionnelle or the traditional method of the second fermentation in the bottle, just as they do in the Champagne region. Juliette Monmousseau, fourth-generation CEO who joined the family business in 2010 and became managing director in 2015, oversees this historic estate founded in 1851 by Étienne Bouvet who, at just 23 years old, purchased eight kilometers of cellars carved into tuffeau stone in Saint-Hilaire-Saint-Florent and named the house after his wife Célestine Ladubay, creating what became one of France's most awarded sparkling wine producers outside of Champagne. Pair this precise sparkling with oysters on the half shell where the wine's bright acidity complements the briny, mineral flavors, or enjoy it with chicken in creamy mushroom sauce as the fine bubbles cut through the richness beautifully.
