Récemment Dégorgé (AKA R.D. or Recently Disgorged) is a cuvée of 60% Pinot Noir and 40% Chardonnay. Only the best among vintages become Bollinger R.D., and 2002 was one of the best vintages in Champagne with great potential for producing perfectly balanced Champagnes. The majority of the grapes used to produce R.D. 2002 Champagne come from Grand cru Vineyards, with the balance harvested from Premier Cru.
R.D. Bollinger wines are always extra dry (Extra Brut), and this R.D. in particular has only 3 to 4 grams dosage per liter. Years of aging in Bollinger’s extensive cellars have imparted notes of honey and walnut, beautifully balanced with minerality and acidity. This full-bodied, powerful wine, with great balance will pair magnificently with roasted quail, duck breast or pasta with sausage.
