Black Bank Hill's Cabernet Sauvignon from Lincoln Lakeshore, Niagara Peninsula is an elegant, full-bodied red wine showcasing notes of blackcurrant, red cherry, dried herbs and sweet tobacco. This dry wine displays refined tannins and impressive complexity that will continue to develop over the next ten years. Serve it at room temperature with herb-crusted prime rib as the wine's structure stands up to the marbled beef, or pair it with wild mushroom risotto finished with aged Parmigiano-Reggiano where the wine's earthy character complements the umami flavors. Winemaker Daniel Charrois ferments this Cabernet with indigenous yeasts before aging it twenty months in French oak barrels, creating layers of spice while maintaining the fruit's purity and the wine's graceful balance. Black Bank Hill is a boutique estate committed to producing terroir-driven wines from Lincoln Lakeshore's unique microclimate, where Lake Ontario's moderating influence creates ideal conditions for ripening Bordeaux varieties to full phenolic maturity. This finely structured Cabernet represents exceptional quality and will cellar beautifully through 2035.
