Extended skin contact and 100% wild yeast used in the wine making process has given this wine all kinds of savoury, earthy, and spice notes. It is 98% savagnin with 2% chardonnay. The nose shows peach, dried apricot, red apple skins, candied ginger, nutmeg, orange blossom, orange peel, and a touch of brine. Repeats on the palate, but with an increased briny-ness and some yeastiness. The lees aging and 12 months spent in neutral oak, along with the skin contact used, make for a substantial mouthfeel that is almost waxy. The finish is long, savoury, and salty. An intriguing wine for sure.

The Savagnin grape, of Jura fame, accounts for a tiny fraction of overall grape plantings in Australia. Almost a month on skins before fermentation has given this vibrant white a lovely texture and rounded mouthfeel. Bright aromas of yellow apple, quince and a faint resiny note feature on the nose and palate. The finish is just slightly astringent, with a subtle savoury note.
