The heavy red clay of the Lincoln Lakeshore sub-appellation is known for yielding small crops of tiny but intense grapes ideal for crafting quality wines such as this Cab Franc. A great deal of effort goes into helping this CF realize its full potential, including an aggressive crop thinning, a trip through the optical sorter, and a precise barrel aging program involving new, one, two, and three-year old American oak. The resulting wine possesses bright fruity notes of blackberry, blackcurrant, cassis, plum, and black cherry complemented by cedar, cigar box, pipe tobacco, and oak spice. Think BBQ and smoke; burgers, ribs, steaks, or smoked cheeses like cheddar or gouda.
