Adamo Estate Foxcroft Vineyard Grower's Series Oaked Chardonnay from Ontario's Twenty Mile Bench is a layered, medium to full-bodied white offering aromas of ripe yellow apple, candied lime, and hints of buttery toast. It's dry with bright acidity and a luxurious texture. Serve it well chilled with butter-poached lobster tail as the wine's rich depth and mineral character will enhance the sweet, tender meat beautifully, or pair it with roasted pork loin where the wine's creamy mouthfeel and crisp finish will complement the savory herbs and tender meat perfectly. Winemaker Vanessa McKean, who grew up on a Black Angus beef and Belgian horse farm in the Blue Mountains before graduating from Niagara College's Wine and Viticulture program and joining Adamo in 2020 as Vineyard Manager and later Assistant Winemaker, crafts this wine from Chardonnay sourced from the renowned Foxcroft Vineyard managed by the Wismer family. Planted in 1996 on clay with loam and limestone soils that slope toward Lake Ontario, the wine ferments and ages for 10 months in French oak barrels (one-third new) before blending and bottling. Enjoy now or cellar for 1-3 years.
