Summer Caesar Salad

Serves 4

Ingredients:
1 large head romaine lettuce, hearts and leafs washed and pat dry.
2 tbsp whole wheat bread crumbs
2 tbsp grated or shaved Parmesan cheese

Dressing:
1/2 cup soft tofu
1/2 tbsp agave nectar
3 tbsp finely grated Parmesan cheese
1 tbsp fresh squeezed lemon juice
1 tbsp dijon mustard
1 clove minced garlic
Salt and fresh ground pepper to taste

Instructions:
Combine dressing ingredients in food processor or blender.
Blend until smooth.
Place washed and chopped lettuce into a large bowl.
Drizzle dressing over lettuce and gently toss, until lettuce is lightly coated with dressing.
Divide into portions onto chilled salad plates.
Top each with shaved Parmesan cheese and four croutons.
Add fresh ground pepper to taste.
