Red Wine

Longview Devil’S Elbow Cabernet Sauvignon 2023, Adelaide Hills, South Australia, Australia: Longview Devil's Elbow Cabernet Sauvignon offers concentrated aromas of blackcurrant, eucalyptus and hints of leather. It's dry and medium-to-full bodied with a polished texture. Serve it at room temperature with slow-braised venison shanks in red wine sauce where the wine's generous fruit complements the rich sauce while its firm tannins balance the tender meat, or cellar it through 2030. Winemaker Paul Hotker crafts this wine from estate-grown grapes on the family-run property, which brothers Mark and Peter Saturno established in Macclesfield in the Adelaide Hills. The wine takes its name from a notorious hairpin corner on the old road to the Adelaide Hills, a white-knuckle turn that locals claim delivers the same adrenaline rush found in a glass of this wine. This versatile wine also pairs beautifully with wild mushroom risotto finished with truffle oil and Parmesan, where the wine's earthy depth echoes the fungi while its bright acidity cuts through the dish's creamy richness. Cabernet Sauvignon food pairings: wild goose in gravy mushrooms and olives, roast saddle of rabbit with apricot and apple stuffing, venison shanks prunes in red wine sauce. White Wine

Laughing Stock Viognier 2022, Okanagan Valley, British Columbia V.Q.A., Canada: Laughing Stock Viognier from Okanagan Valley is a lush, medium-bodied white offering aromas of ripe apricot, white blossom, and hints of warm spice. It's dry with bright acidity and a creamy texture. Serve it well chilled with pan-seared scallops as the wine's opulent fruit and silky mouthfeel will enhance the sweet, tender seafood beautifully, or pair it with roasted chicken with herbs where the wine's layered complexity and persistent finish will complement the savory flavors perfectly. Winemaker Sandy Leier, formerly of Sandhill Wines and now leading Laughing Stock's innovative approach since taking over three years ago, crafts this wine from 100% Viognier sourced from the Perfect Hedge Vineyard in Osoyoos and Bullpine in Okanagan Falls. The grapes are whole cluster pressed and fermented in 69% neutral French oak and 31% concrete eggs, then aged sur lie for six months, a unique combination of vessels that adds both richness and movement to the wine.
