Red Wine
Stratus Gamay 2024, Niagara ON The Lake, Ontario V.Q.A., Canada: Stratus Gamay offers vibrant aromas of wild strawberry, violet and hints of cinnamon. It's dry and medium-bodied with polished tannins. Serve it lightly chilled with bacon-wrapped pork tenderloin where the wine's bright acidity cuts through the rich bacon while its delicate red fruit complements the tender meat, or cellar it through 2030. Winemaker Dean Stoyka crafts this wine at the world's first LEED-certified winery, established in 2005 when founder David Feldberg built a gravity-flow facility powered by geothermal energy on Niagara's Lakeshore subregion. This versatile wine also pairs beautifully with wild mushroom risotto finished with herbs and Parmesan, where the wine's earthy character echoes the fungi while its fresh acidity balances the dish's creamy richness. Gamay food pairings: bacon wrapped pork tenderloin with braised pork belly, rosemary fingerling potatoes and tomato chili jam. Drink: 2026 - 2030 312082 14% XD 750 mL $35.20 Score: 90/100.
