Racy and in-your-face, as a style for Sherry. The design behind this seems to be a Fino with Amontillado characteristics - bridging the gap between the two styles as Palo Cortado does between Amontillado and Oloroso.
Vibrant lemon-yellow in colour.
Pungent aromas of pastry crust, green olive, saline, applesauce, white pepper, and pear. Keep it cold and drink it fast. Most Finos, this one included, lose their aromas fast. They do not keep as well as other fortified wines. Though, it does keep better than most Finos, it is best when freshly opened.
The flavours are great! A lot more olive and pickled radish to the entry. It has a lot of fruit too. Green pear and applesauce, but also a spiced apple character as it breathes. Crisp licks of alcohol and almonds (aldehydes) give it loads of potency. This is a Sherry for nerds about Sherry.
These sorts of wines might seem nightmarish for wine people to pair food with, but the opposite is true. It is definitely made for tapas: olives, hummus, herring, anchovies, and cashews roasted in chili pepper. Prosciutto, Iberian ham, pickled ginger and maki rolls are all great as well. Be as bold as this wine, while pairing.
Basically, this wine spends the first 4.5 years of its life becoming a fino, under its flor veil, but that layer gives way when the wine is fortified with spirits. It is then aged in American oak for two years to allow some intense oxidative aromas to develop.
