Dandelion vineyards are meticulous in how they handle their grapes to produce their wine. Their vineyard does not sound like an industrial machine - everything is done by hand. They hand harvest, fermented and hand plunged in open-top fermentors, amd aged 18 months in used French oak.
Deep purple, with red reflections; the wine has a glasscoating effect as well.
The aromatics are dark and brooding, though not as extroverted as this wine has been on other vintages. It's more subtle, though complex. There's some chocolatiness to the oak, but it is also subtle and it doesn't hide the fruit. Black pepper, damson, and cassis aromas
Well made and it tastes terrific. Menthol, blackberry, cassis, old leather, cocoa powder, and a peppery finish.
Don't be afraid of sediment. It's a sign they refrained from fining or filtering the wine at the bottling stage. Those processes often hamper the quality of the finished wine - removing flavourful and aromatic compounds. This wine should age for a decent period of time (at least five to seven years).
Pair this wine with elk burgers or a rack of lamb.
