Traditional Method, BRUT NATURE / Dry, earthy, toasty and superb, especially for the price. Refreshing and unique. Got a big party or wedding? You can't go wrong with this one. MINE: This non-vintage sparkling wine from Spain ("cava" means cave) is a blend of 45% Xarel-lo, 30% Macabeo, 10% Parellada, 10% Chardonnay, and 5% Subirat Parent grapes with 10% of the Xarel-lo grapes barrel-fermented and matured for 2 years. Remarkably, this bubbly was hand-riddled (bottles were turned slowly upright) rather than done by machine. The quality shows in the glass. OTHER: I did not taste this aromatic Cava a few years back and have to believe that great improvements have been made. The Brut Nature ideology is well-suited to Cava and here closer to excellent. Aromas deliver rusticity, wild ginger, wet stone and concrete. Stone fruit (as a departure) indicates ripeness and then what matters, matters most and that is texture.
