Domaine Queylus Tradition Pinot Noir from the Niagara Peninsula V.Q.A. is a dry, medium-bodied cool-climate red that opens with an inviting nose of fresh strawberry, dried rose petal, black tea, and a gentle dusting of warm spice. On the palate it shows bright red cherry and cranberry fruit, woven through with earthy undertones, a savory mineral thread, and supple tannins that give the wine just enough grip to make it interesting. Lightly chilled, it drinks beautifully now and will continue to develop through 2030. Head Winemaker Kelly Mason, who took the reins at Queylus in 2018 after being mentored by the winery's celebrated founding winemaker Thomas Bachelder, crafts this wine from organically grown estate fruit across multiple small parcels on the Niagara Escarpment, with each lot wild-fermented separately to capture the full complexity of the vineyard. The winery takes its unusual name from Gabriel Thubieres de Levy de Queylus, a 17th-century Sulpician priest from France believed to have overseen some of the earliest viticulture in the region. Pair it with herb-crusted lamb chops alongside a simple roasted garlic sauce, where the wine's earthy red fruit sings against the richness of the meat, or try it with a mushroom and lentil ragout over creamy polenta, letting the wine's savory mineral character echo the umami depth of the dish.
