COS Cerasuolo di Vittoria Classico from Sicily is a silky, medium-bodied red offering aromas of tart red currant, crushed violet, and hints of river pebbles. It's dry with fine tannins and vibrant acidity. Serve it lightly chilled with seared tuna steaks as the wine's bright fruit and mineral character will enhance the fish's rich texture beautifully, or pair it with eggplant caponata where the wine's herbal notes and refreshing finish will complement the sweet and savory flavors perfectly. Founded in 1980 by three school friends, Giambattista Cilia, Giusto Occhipinti, and Cirino Strano (whose initials form the winery name), COS revolutionized Sicilian winemaking by abandoning conventional methods after a few vintages and returning to ancestral techniques using cement vessels and later Georgian-inspired terracotta amphorae. The winery became a benchmark producer of Cerasuolo di Vittoria, which received DOCG status in 2005 as Sicily's first and only wine with this prestigious designation, and COS farms organically and biodynamically on sandy limestone soils unique to southeastern Sicily. Enjoy from 2024 or cellar for 3-5 years.
