Charles Baker B-Side Riesling is a beautifully crafted Ontario white that tells an intriguing story right from the label, as it is made from top-tier fruit sourced from the celebrated Ivan and Picone vineyards that did not make the final cut for Baker's renowned single-vineyard bottlings, yet delivers a wine of striking finesse and character in its own right. It is off-dry, light-to-medium-bodied, and notably low in alcohol at just 10.3%, with a pristine nose of orchard blossom, ripe apricot, tangerine zest, and a cool, slate-like minerality that is unmistakably Niagara in origin. The palate is graceful and precise, with a lively, mouth-cleansing acidity, a gentle thread of wildflower honey, and a refreshingly long finish that keeps the wine dancing well after the last sip. Serve it well chilled and enjoy through 2034, as Riesling's naturally high acidity and fine structure make it one of the world's most rewarding grapes for long-term cellaring.
