The colour here is pale with a rim of ripe cherry shading to garnet. The nose shows savoury cherry along with beetroot, some forest floor, moss and barrel derived vanilla notes. On the palate it initially shows very savoury beetroot/cherry and overripe cherry, vanilla/nutmeg, sweet spices and is a touch hot, simple, a little closed, mossy. After a half hour or so the nose revealed new floral, dark fruit notes and a very appealing semi-savoury cherry/vanilla. In the mid palate there was some slight stewed/medicinal/confected cherry notes, along with sweet spices again especially nutmeg and vanilla. The tannins here are soft, with good acidity, a medium intensity and medium minus body. The finish showed lingering firm floral/cherry/vanilla notes.

The wine was made from a blend of six Dijon clones: 115, 114, 777, 667, 828, 943. Vine ages varied between 3rd to 6th leaf. The grapes were selectively hand harvested and sorted into small individual fermenters with a combination of destemmed and whole cluster fruit then cold soaked and fermented spontaneously with naturally occurring yeasts for 19-28 days. The wine spent a total of 13 months in barrel before blending. It was bottled unfined and unfiltered in February 2016, under a screwcap fitted with a breathable liner to promote micro-oxygen transfer into the wine.
