Winemaker Chris Hatcher manages the vineyards for his wines very intensely, even using overhead infrared mapping to determine which soils are best for which grapes, and how much to water or not. These winemakers see the devil in the weeds, allowing dandelions to grow among the vine grows as they suppress other weeds and provide nutritious mulch. The "wishing clocks" of white seed in the spring provide new life. The Shiraz grapes are sourced form a single vineyard in the foothills of the McLaren Vale. The vines are planted in ironstone pebble laden with clay loam, over ancient Kurrajong Formation geology of silica cemented conglomerate ideally suited to grow Shiraz. Bunches are hand picked in mid-March and fermented together in open top fermenters with ambient yeast and hand plunging for 12 days before basket pressing and aging in mostly French oak barriques before bottling without fining. Full-bodied, robust and rustic with full-throttle black fruit, smoke, oak and spice aromas. Polished tannins and a long finish. Decant 1 hour and pair with rare steak. This is a special edition wine named in honour of Lindemans Winery founder Dr. Henry Lindeman, who in 1843, with his wife Eliza, planted the first vines in the Hunter Valley, just south of Sydney. d'Arenberg The Footbolt Shiraz 2016, Mclaren Vale, South Australia, Australia: d'Arenberg's The Footbolt 2016 is a consistent, pleasing, full-bodied Shiraz with its hallmark dark berry, blackberry and eucalyptus flavours on the palate. Great value under $20 as well. Not fined or filtered the wine is matured for 12-18 months in a combination of French and American oak. Fermentation was stopped two-thirds of the way through and juice was not filtered. "Footbolt" is named in honour of the racehorse that founder Joseph Osborn had to sell in order to start the d'Arenberg winery in 1912. Since 1912, the Osborn family has farmed vineyards in the McLaren Vale. Perfect with grilled steaks on the grill, but can easily cellar for three more years to start showing its best.
