Fragrant with dark cherry and spicy aromas on the nose; dry and vibrant with spiced plum, blackcurrant, cherry, dark berry, savoury herb flavours rich on the palate. Acidity is edgy and tannins are firm and grippy. Shows a lot of promise, but needs some time in cellar to unwind. Try in 2023. Pour with bison burgers from the grill. Food pairings: pork sausage casserole, roast chicken, grilled rib eye steak.
