Thirty Bench Wild Cask Cabernet Franc 2022, Beamsville Bench, Niagara Escarpment, Ontario, Canada: Thirty Bench Wild Cask is a medium-plus-bodied Cabernet Franc from Beamsville Bench, Niagara Escarpment, Ontario, with a firm weight and dry profile, best served at room temperature. Winemaker Thirty Bench crafts this wine from estate-grown grapes, fermented with wild yeast and matured in French oak, offering ripe blackberry, mulberry, cured tobacco, and white pepper flavours with a savoury, fresh palate. At 13.3% alcohol, it has strong aging potential through 2030, developing greater depth and elegance over time. Pair it with roast duck to highlight its dark fruit and spice, or turkey to complement its savoury, structured tannins. White Wine

Thörle Riesling 2022, Rheinhessen, Germany: Thörle Kabinett Riesling from Rheinhessen is an off-dry, light-bodied white wine crafted from organically grown, vegan-friendly grapes, revealing very fresh, crisp pear and ruby grapefruit aromas with a touch of white blossom, while the palate is very pure and bright with uplifting energy and a long, refreshing finish. Serve it chilled with spicy Thai shrimp salad, where the wine's crisp character and gentle sweetness cool the heat while its bright acidity complements the citrus-dressed greens, or pair it with pan-seared trout with almonds as the wine's pear and citrus notes harmonize with the delicate freshwater fish while its refreshing finish cuts through the buttery nuts. Winemaker Johannes Thörle oversees production at Weingut Thörle, a family estate in Rheinhessen that has been pioneering organic viticulture and crafting terroir-driven Rieslings since 1990, showcasing the region's diverse limestone and clay soils.
