Red Wine

Redstone Cabernet Franc 2022, Lincoln Lakeshore, Niagara Peninsula, Ontario V.Q.A., Canada: Redstone Cabernet Franc V.Q.A. from the Lincoln Lakeshore appellation of Niagara Peninsula is a medium-bodied, bone-dry Ontario red that opens with aromas of fresh red currant, crushed raspberry, dried herbs, and a cool green pepper note that's pure Cab Franc. On the palate it's bright and focused, with sour cherry, cedar, a hint of pencil shavings, and a long, mineral-driven finish with fine-grained tannins. Winemaker Jessica Otting crafts this wine from the 38-acre organically farmed estate, named for its red clay soil and the large stones that define the property. Redstone was named Canadian Winery of the Year at the National Wine Awards of Canada in 2017. Serve it lightly chilled and drink it now, or cellar it through 2037. Pour it alongside a venison steak with a red currant reduction, where the wine's bright fruit mirrors the sauce, or try it with slow-braised brisket, where its firm structure holds its own against the richness. White Wine

Jules Lebègue 2024, Graves, Bordeaux A.O.C., France: Jules Lebègue Graves Bordeaux A.O.C. is a medium-bodied, extra-dry white from the Graves appellation on Bordeaux's left bank, where well-drained gravel soils over limestone produce whites of real tension and minerality. The nose is nervy and fresh with crunchy green apple, fresh herbs, and zesty citrus, with a crisp, mineral palate and a clean, bright finish. Serve it chilled and drink it through 2028. Jules Lebègue has been one of Bordeaux's leading négociants since 1828, sourcing wines from established terroirs across both banks of the Gironde and bringing them to market under the house's own label, a practice that has kept this name on tables around the world for nearly two centuries. Food pairings: poached trout with cucumber and dill crème fraîche, niçoise salad with tuna and green beans, steamed mussels with white wine and shallots.
